This is a vegan and gluten free recipe for banana chocolate chip muffins. Muffins go
well with anything so it is perfect for any occasion! Whether you decide to bake them for
breakfast or dessert, I can guarantee that you—and anyone you share them with—won’t
be disappointed.
I love muffins and the perfect combination known as banana chocolate, so that makes
this recipe one of my all time favorites. This recipe is simple, so even those who don’t
bake often can give it a try! Additionally, it only takes around 45 minutes from start to
finish. I hope you all enjoy the muffins as much as I do!
Ingredients needed (for 9-12 muffins):
● 2 large ripe bananas (make sure they are mashed)
● 1 3/4 cup of oat flour
● 1⁄2 cup of coconut sugar
● 1⁄3 cup of oil (I used melted coconut)
● 1 tsp of baking powder
● 1 tsp of baking soda
● 1 tsp of ground cinnamon
● Lots and lots of chocolate chips!
Instructions:
First, mash your bananas into a bowl. Then, add in the oil, baking powder, baking soda,
and ground cinnamon. Next, mix all of that together and slowly stir in the flour until the
batter is smooth. Finally, fold in chocolate chips. Pour the mix into a greased or lined
muffin tin (use the standard one) and bake for 20-25 minutes at 375°F.
