There’s nothing more magical than a slice of this Brownie Peanut Butter Swirl Loaf.
What makes me say that? The fact that it can appeal to people on both sides of one of
the hottest topics of the century: is smooth or crunchy peanut butter superior?
Personally, I prefer crunchy peanut butter on regular bread because of the additional
texture that makes the whole eating experience that much more dynamic. But in this
loaf, both types of peanut butter are equally as welcome. In fact, you might as well
include a spoonful of each. There’s no harm in doing so! As a wise man once said, the
more (peanut butter) the merrier.
Ingredients:
● 1⁄2 c dairy free yogurt (I use a vanilla & cinnamon plant based yogurt)
● 11⁄2 c packed oat flour
● 1⁄2 c coconut sugar
● 1⁄2 c almond milk
● 2 chia eggs
● 3 tbsp cacao powder
● 1 tsp baking powder
● 1⁄2 tsp baking soda
● peanut butter for swirling
In a bowl, combine all the ingredients except for the peanut butter. Stir batter until
smooth. Pour into a greased loaf pan and swirl in your peanut butter on top. Bake at
375°F for 30-35 minutes, remove from the oven to cool and enjoy!
