Ingredients (for 1 loaf):
● 2 cups oat flour
● 3⁄4 cups coconut sugar
● 2 eggs (or substitute with 1⁄2 cup applesauce)
● 1⁄4 cup coconut oil (melted)
● juice of 2 lemons (approx. 6 tablespoons of lemon juice)
● 1 teaspoon baking powder
● 1⁄2 teaspoon baking soda
● 1⁄4 cup poppy seeds
Instructions:
Sift the oat flour, coconut sugar, baking powder, and baking soda into a bowl. Whisk
together.
In a separate bowl, add the lemon juice, coconut oil (melted), and eggs (beat
beforehand). Whisk together.
Gradually add the wet ingredients to the dry ingredients, mixing well. Fold in poppy
seeds.
Transfer batter to a greased loaf pan.
Bake at 375°F for 22-25 minutes.
