What’s better than just a brownie? A brownie combined with a cookie! If you’re looking
for a two-in-one treat to sweeten your day, then this recipe is perfect for you.
Ingredients for brownie layer:
● 1 c white whole wheat flour (can substitute with other flours excluding coconut!)
● 1⁄4 c coconut sugar
● 3 tbsp cacao powder
● 1⁄2 tsp baking powder
● 1⁄4 tsp baking soda
● 1 chia egg (1 tbsp chia seeds + 2.5 tbsp water)
● 1⁄4 c melted coconut oil
● 1⁄4 c almond milk
Instructions:
Make chia egg and set aside for 5 minutes. While the chia egg is setting, combine other
ingredients together. Add in the chia egg, mix everything until smooth and pour into a
greased pan.
Ingredients for cookie layer:
● 1 c white whole wheat flour
● 1⁄4 c coconut sugar
● 1⁄2 tsp baking powder
● 1⁄4 tsp baking soda
● 1 tsp cinnamon
● 1 tsp vanilla extract
● 1 chia/flax egg
● 1⁄4 c melted coconut oil
● 2 tbsp almond milk
● 1⁄4 c vegan chocolate chips
Instructions:
Make the chia egg, and while this one is setting, mix all the ingredients for the cookie
layer together. Then, add the chia egg into the bowl and mix until smooth. Fold in
chocolate chips. Pour batter on top of the brownie batter and press down a little bit. Top
with more chocolate chips and flaky sea salt.
Bake at 375°F for 25 minutes. Remove from the oven, let cool and enjoy!
